Mushrooms: A ny combination of your favorite mushroom varieties would work in this soup, however, inexpensive Baby Bella or cremini work better than white mushrooms and they give more color and flavor.

The deep earthy flavours of a classic home-made cream of mushroom soup recipe can’t be beat, especially when it’s ready in minutes. You’ll never open a can of mushroom soup after trying our recipe! Heat oil or butter in a large, heavy-bottompot or dutchoven. Add onion and saute over medium-high heat, 3-4 minutes, stirring constantly until golden and fragrant. Lower heat to medium, add garlic, saute 2 minutes.

Cook white, brown, or wild rice on the side and add a little to your bowl of mushroom soup for added texture and grain. I don't recommend substituting the cream for something else simply because it will change the flavour but that doesn't mean it wouldn't work. Can I Freeze This Mushroom Soup? Mushrooms – I will often use cremini mushrooms for this soup, though regular white button mushrooms or any mushroom you have or prefer is just fine, too. I like to buy the whole mushrooms and slice them myself, as I like the extra chunkiness. That said, pre-sliced mushrooms are just fine here, too. No matter which way you make it, rest assured this Mushroom Soup is a winner in my book and will be in yours too!Broth: Use vegetable broth or mushroom broth as the base of the soup. It adds richness and depth of flavor. Onion and garlic - both fresh not canned. In theory, you can make this recipe without garlic, but you have to use onions in this case. These aromatics are the foundation of great flavor in soups. For the onion, brown/yellow, shallot, or sweet onion are fine. Making this Mushroom Soup could really not be any easier!
