About this deal

Antony has written numerous bestselling books, including Real Family Food, Fast Family Food and Antony Makes it Easy for Mitchell Beazley. Yet again, I find myself with lamb chunks ready to slow cook and a plethora of delicious recipes to choose from, so I was trying to find something different from my usual lamb stews bulked out with beans or grains. It's also a place I can add photos, thoughts and pictures of the cat that I can't file anywhere else! I find brassicas hard to grow and someone told me to stamp them in when you plant them, they don’t like loose soil. After a ‘sort of’ Facebook vote, we decided that life was too short, and cash too tight to invest in the time, food and equipment needed!

Jay (Antony’s wife) helps out too; she took a long time to get into it but is a good all-rounder and doesn’t worry about chipping her nails. Some pressure cookers have a quick steam release valve to reduce pressure quickly at the end of cooking; with the others, you need to either wait five minutes or run cold water over the pan. There is a book and AWT branded pressure cooker opportunity here, and I only expect a few thousand quids for the idea!With a slow cooker, the food you prepared before going out is now a mouth-watering one-pot family meal; with a pressure cooker, your raw ingredients are transformed into a flavoursome Irish stew within 15 minutes. The potatoes at the bottom were squishy with the onions, the ones on top had an edgy crunch and the lamb just fell apart. Once you have put the ingredients into the casserole, you just leave them to cook while you get on with. Butter the bottom of an over proof casserole with about 10g butter (a big chunk), I'm using a low cast iron one. I don’t think the flavours are strong enough to maintain interest for a large main course, although the OH said it tasted quite ‘meaty’, and I needed to add cheese to the top, as usual!
